Excellent book. I used it for a class. It has a lot of information about nutrition : carbohydrates, fats, proteins, vitamins, etc. The last chapter also includes information about diseases such as cancer, diabetes, gluten intolerance, etc. and how to prepare foods for these kind of people. Very good book. I learned a lot and I am eating healthier now. Thanks!!
